Breakfast Omelet Muffins – Paleo

Yep, these Breakfast Omelet Muffins are in fact Paleo. I’m making them tonight so I can grab one in the morning on my way to Crossfit. That way everyone  will be impressed when the instructor asks, “What did you eat before coming today?” I don’t think he was impressed with my previous answer of , “Oh, just a couple of chocolate chip cookies.”

  1. I’m going to make these tonight since I have to give up my morning Peanut Butter Cheerios. I’m going to try Paleo for 30 days, starting today after I finish my Coke Icee… Or you could just bring me one of yours to Crossfit 😉 j/k

  2. What is Paleo?? BTW, I am enjoying your blog. Need to try that coffee thing, and I could NEVER give up pizza! It’s a complete meal covering all of the food groups!

  3. How did you go making these eggy muffins? I have made them a few times and have issues with them sticking to the tin… here’s a great tip… buy one of those silicon baking trays… grease them up with a little olive oil and they don’t stick AT ALL…

    • mine didn’t stick at all but I greased the tins with coconut oil first. They lasted me all week. Just ate the last one now. Plus I think all the bacon inside kept them lubed up pretty good. Do you use the same recipe?

      • I bought a pretty good cookbook called Everyday Paleo. Do you guys have kids? Good recipes if you do. It’s geared towards people who need to quickly cook stuff that isn’t too weird. Right up my alley, kids or not. Am making “pancakes” as we speak. They look like road kill.

      • Nope no kids here and haven’t got that book yet. Jay is a bit of a whiz in the kitchen and can usually whip up anything without a recipe…

        We have Cordain’s paleo cookbook for inspiration and I downloaded a paleo recipe app….

        Im the king of quick and easy though..
